NATIONAL SPINACH DAY – For most of my life, I have preferred vegetables raw rather than cooked. When I was young, my mother would put raw cauliflower or broccoli on my plate even though she cooked the vegetables for everyone else. My grandmother thought my mom was too lenient with me but as my mom pointed out … I always ate those veggies happily.
I feel the same way about spinach. I love raw spinach in a salad but not so much cooked. In it’s natural state, it is crunchy and has a nice flavour. Spinach is a fantastic food as it is full of iron, calcium, assorted vitamins and anti-oxidants.
Popularized to kids in North America by Popeye, spinach actually hails from southwestern Asia. It is believed that it was introduced to China by Nepal. There are a myriad of ways to celebrate spinach. Choose your favourite!
